Stuffed Peppers

Stuffed peppers are the kind of dish nearly every family has its own version of, passed down with small variations. This one leans on the classic pairing of ground meat and rice, with a tomato sauce that soaks into the pepper from both inside and out, keeping every bite juicy.
For stuffing, look for medium peppers with a flat, sturdy base so they stand upright in the pot or dish instead of tipping over as they cook. The rice goes into the filling parboiled rather than raw, so it finishes cooking alongside the meat without staying crunchy or turning mushy.
You can cook the peppers either way: simmered on the stovetop in a heavy pot, or baked covered in the oven — both give a similar result, and the choice mostly comes down to convenience. If simmering on the stove, keep an eye on the sauce level so it doesn’t boil dry and scorch the bottom of the pot.
Stuffed peppers pair well with sour cream or plain yogurt, and a slice of crusty bread is handy for mopping up the extra sauce. The dish reheats beautifully, and leftovers often taste even better the next day once the peppers have had time to soak up the sauce overnight in the fridge.
Ingredients
- 6 large bell peppers
- 500 g ground beef or pork
- 150 g rice, parboiled until half-cooked
- 1 onion, finely chopped
- 1 carrot, grated
- 400 g canned tomatoes or tomato sauce
- 2 garlic cloves, minced
- 1 tbsp vegetable oil
- salt and black pepper to taste
- fresh dill and parsley for serving
Instructions
- Cut the tops off the peppers and remove the seeds and membranes, being careful not to tear the walls.
- Saute the onion and carrot in oil until soft, stir in half the garlic, then remove from heat.
- Combine the ground meat, parboiled rice, sauteed vegetables, salt, and pepper into an even filling.
- Fill the peppers generously without packing the filling too tightly, so the rice has room to finish cooking.
- Stand the peppers upright in a deep pot or a baking dish.
- Thin the tomatoes with a little water to a saucy consistency, stir in the remaining garlic, and pour it over the peppers.
- Cover and simmer on the stovetop or bake at 180°C (350°F) for about 45-50 minutes, until the peppers are tender.
- Serve hot, spooned over with the tomato sauce and sprinkled with fresh herbs.
