Mushroom Potato Soup

Mushroom potato soup is the kind of dish that comes together almost on autopilot, yet somehow always feels like real home cooking. Button mushrooms bring plenty of flavor without a long simmer, and the potatoes make the soup filling and satisfying without needing any meat at all.

The trick to real depth of flavor is browning the mushrooms properly before the broth goes in. Mushrooms simmered straight in liquid taste fairly flat, but sautéing them until golden and letting their moisture cook off first builds a much richer, more savory base.

A splash of cream at the end turns a simple vegetable soup into something silkier, though it’s entirely optional — the soup holds up fine without it if you want to keep things lighter. For a thicker bowl, blend part of the soup and leave the rest chunky so you still get bites of potato and mushroom.

Serve it with crusty bread or croutons on the side, and a scattering of fresh herbs right before eating brightens up the whole bowl.

  1. Slice the mushrooms, dice the onion and carrot finely, and mince the garlic.
  2. Sauté the onion and carrot in oil until soft, then add the mushrooms and cook until the liquid they release has evaporated.
  3. Add the garlic and cook for another minute, stirring so it doesn’t burn.
  4. Peel and dice the potatoes into small cubes and add them to the pot along with the broth.
  5. Bring to a boil, then lower the heat and simmer for 15-20 minutes until the potatoes are tender.
  6. Stir in the cream, season with salt and pepper, and warm through for a couple of minutes without letting it boil hard.
  7. If you like a thicker texture, blend part of the soup while leaving some mushrooms and potato cubes whole.
  8. Ladle into bowls and serve hot, topped with fresh dill.
