Kefir Waffles

Kefir waffles are a great option when you want something a little special for breakfast without a complicated recipe. Kefir keeps the batter tender on the inside, and combined with baking soda and baking powder, it gives the waffles an especially light, fluffy structure with a gentle tang that pairs nicely with sweet toppings.
This batter doesn’t need a long rest or elaborate mixing — you can stir everything together in about ten minutes and go straight to cooking. If your kefir is a bit past its freshest and slightly more sour than usual, that actually works in the batter’s favor, since the baking soda neutralizes the extra acidity while adding lift.
A crisp exterior with a soft center is the goal here, and the key is not overcooking the waffles on too high a heat — a medium setting on the waffle iron and a golden, rather than deep brown, color is what you’re aiming for. Leftover waffles keep well in the fridge and crisp back up nicely in a toaster.
Serve them with sweeter toppings like honey and berries, or go simpler with sour cream or cottage cheese if you’d rather keep breakfast a little less sweet.
Ingredients
- 300 ml kefir
- 2 eggs
- 250 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp sugar
- 50 g butter, melted
- pinch of salt
- vegetable oil for greasing the waffle iron
Instructions
- Whisk the eggs with the sugar and a pinch of salt until slightly fluffy.
- Stir in the kefir and melted butter until combined.
- Sift the flour with the baking powder and baking soda and fold it into the wet mixture in two or three additions, mixing until smooth and lump-free.
- Let the batter rest for 5-10 minutes while the waffle iron heats up.
- Preheat the waffle iron and brush it lightly with oil, even if it has a nonstick coating.
- Pour a portion of batter onto the center of the iron and close it, cooking according to your appliance’s instructions, usually 3-5 minutes until golden brown.
- Carefully remove the finished waffle and repeat with the remaining batter, re-greasing lightly between batches if needed.
- Serve the waffles warm with sour cream, honey, berries, or maple syrup.
