Chicken noodle soup is one of the most versatile dishes in home cooking: it works as an easy weeknight lunch and is also the go-to remedy when someone’s coming down with a cold, since the body craves warmth, fluids, and something light and easy to digest. The trick to a good version isn’t a long ingredient list — it’s patience, since a slow, gentle simmer is what makes the broth clear and genuinely flavorful.
For a rich broth, bone-in chicken works far better than boneless breast alone — a whole bird or a mix of thighs and drumsticks. The bones and skin release gelatin and depth of flavor that breast meat simply can’t match on its own. The foam that rises during the first few minutes of cooking should be skimmed off regularly; that habit is what keeps the broth light and clear instead of cloudy.
It’s best to cook the noodles directly in the broth shortly before serving rather than separately ahead of time — that way they pick up flavor without turning mushy. If you plan to keep the soup for a few days, it’s smarter to boil the noodles separately and add a portion to each bowl as you serve it, keeping the broth, vegetables, and chicken on their own — otherwise the noodles will soften too much sitting in the fridge.
Ingredients
- 1 whole chicken, or 1 kg chicken thighs/drumsticks
- 3 liters water
- 1 large carrot
- 1 onion
- 2 celery stalks
- 2 bay leaves
- 150 g thin noodles or vermicelli
- salt and black pepper to taste
- a handful of fresh dill or parsley
Instructions
- Cover the chicken with cold water, bring to a boil over medium heat, and skim off the foam that rises to the top.
- Reduce the heat to low, add the peeled whole onion and bay leaves, and simmer covered for 40-50 minutes.
- Remove the chicken from the broth, let it cool slightly, then pull the meat off the bones, discarding skin and bones.
- Strain the broth through a sieve to remove the onion, bay leaves, and any small bits.
- Dice the carrot and celery, add them to the strained broth, and simmer for 10 minutes.
- Add the noodles and cook for another 5-7 minutes until tender, watching closely so they don’t overcook.
- Return the shredded chicken to the pot, season with salt and pepper, and heat through for 2-3 minutes.
- Ladle into bowls and top with fresh herbs before serving.
