Cabbage pie is a piece of homestyle baking that most people who grew up eating Eastern European food will recognize instantly. Soft yeasted dough wraps around a savory filling of braised cabbage and egg, making it a pie that’s both simple to put together and genuinely filling — a solid choice for a weeknight dinner or something to pack for lunch.
The trick to a good filling is properly braising the cabbage rather than just quickly sautéing it. The cabbage needs to soften fully and shed its excess moisture, or the bottom of the pie can end up soggy after baking. Drain off any liquid left in the pan after cooking, and let the filling cool to room temperature before spreading it on the dough — a hot filling softens the dough too much and keeps the pie from rising evenly.
The hard-boiled eggs in the filling add structure and make the pie heartier, though they can be left out for a lighter, vegetable-only version. A handful of chopped dill or scallions also works well stirred into the filling, brightening up the braised cabbage.
This pie is just as good served warm as fully cooled, which makes it easy to prepare ahead of time. It keeps in the fridge under plastic wrap for up to three days, and a short reheat in the oven brings back the softness of the dough along with a light, crisp top crust.
Ingredients
- 500 g all-purpose flour
- 250 ml warm milk
- 7 g active dry yeast
- 1 tbsp sugar
- 1 egg (for the dough)
- 50 g butter, melted
- 1 tsp salt
- 700 g white cabbage
- 1 large onion
- 3 hard-boiled eggs (for the filling)
- 3 tbsp vegetable oil
- salt and black pepper, to taste
- 1 egg yolk, for brushing
Instructions
- Dissolve the yeast and sugar in the warm milk and let it sit for 10 minutes, until foamy.
- Mix the flour with the salt, then add the egg, yeast mixture, and melted butter, and knead into a soft dough.
- Cover the dough and let it rise in a warm spot for 1 hour, until doubled in size.
- Finely shred the cabbage and onion, and cook them in vegetable oil for 15-20 minutes until soft, season with salt and pepper, and let cool.
- Chop the hard-boiled eggs and mix them into the cooled cabbage filling.
- Divide the dough into two uneven pieces, roll out the larger one, and press it into a baking dish, forming an edge.
- Add the filling, cover with the second piece of dough, pinch the edges together, and prick a few holes to let steam escape.
- Brush the pie with egg yolk and bake at 190°C (375°F) for 35-40 minutes, until golden brown.
