Homemade Pita Bread

Homemade pita is one of those breads where a simple four- or five-ingredient dough turns into something genuinely impressive: at the right temperature, a thin round of dough puffs up in the oven or skillet, splitting into two layers with an airy pocket perfect for stuffing.
The puff comes down to steam. A thinly rolled piece of dough hits a very hot surface, the moisture inside flashes to steam almost instantly, and the round inflates like a small balloon, separating into two layers as it does. That’s why preheating the skillet or oven properly matters so much — on a surface that isn’t hot enough, the pita bakes flat with no pocket, still perfectly edible but far less versatile for stuffing.
Roll the dough evenly, avoiding thin or thick patches, since uneven thickness keeps the round from puffing symmetrically. It also helps not to leave the pitas over the heat too long — once golden spots appear and the surface has just set, they’re done; any longer and the bread turns tough.
Fresh homemade pita is a different animal from the store-bought kind — softer, more fragrant, and far more likely to actually have a real pocket inside. Split one open and fill it with falafel, vegetables, and a sauce, use it to scoop up hummus, or simply eat it warm with a drizzle of olive oil.
Ingredients
- 2 1/2 cups (300g) all-purpose flour, plus more for dusting
- 1 tsp active dry yeast
- 1 tsp sugar
- 1 tsp salt
- 3/4 cup (180ml) warm water
- 1 tbsp olive oil
Instructions
- Dissolve the yeast and sugar in the warm water and let sit for 5-10 minutes, until foamy on top.
- Combine the flour and salt in a large bowl, then add the yeast mixture and olive oil.
- Knead into a soft, slightly sticky dough for 5-7 minutes, until smooth and elastic.
- Cover the bowl with a towel and let the dough rise in a warm spot for 1 hour, until doubled in size.
- Divide the dough into 6 pieces, shape into balls, and roll each one into a round about 1/4 inch (5mm) thick.
- Heat a dry skillet over high heat, or preheat the oven to 250°C (480°F) with a baking sheet inside.
- Cook each round for 2-3 minutes per side in the skillet, or 3-4 minutes in the oven — the pita should puff up and pick up a few golden spots.
- Wrap the finished pitas in a clean kitchen towel right away to keep them soft until serving.
