Cottage cheese casserole is one of those recipes that gets passed down almost unchanged from one generation to the next, and for good reason: it works reliably even for cooks who don’t consider themselves confident in the kitchen. Semolina acts as a natural thickener that keeps the casserole from spreading out too thin, and letting the batter rest before baking is the real trick behind a texture that’s dense but still tender, rather than dry or overly wet.
The quality of the cottage cheese matters more than any other ingredient here. If it’s especially wet, pressing it briefly through cheesecloth helps, otherwise the casserole can turn out denser and need extra time in the oven. Cottage cheese around 5-9% fat gives the most balanced result — fat-free cheese tends to dry the casserole out, while very rich cheese makes it heavier and less airy.
The sour cream layer on top isn’t just about flavor — it’s a practical trick that browns nicely in the oven, gives the casserole an attractive golden top, and helps keep it from drying out. Raisins can be swapped for chopped dried apricots or prunes, or left out entirely without hurting the result.
Serve the casserole slightly warm or fully cooled, since it holds together and slices more neatly that way. It pairs well with sour cream, jam, or condensed milk, and keeps just as well the next day if stored covered in the fridge.
Ingredients
- 500 g cottage cheese (5-9% fat)
- 3 eggs
- 3 tbsp semolina
- 70 g sugar
- 50 g sour cream for the batter + 2 tbsp for the top
- 1 tsp vanilla sugar
- a pinch of salt
- 50 g raisins (optional)
- butter for greasing the pan
Instructions
- Mash the cottage cheese with a fork or blend it smooth if it’s grainy.
- Add the eggs, sugar, vanilla sugar, and salt, and mix thoroughly.
- Stir in the semolina and 50 g sour cream, then let the batter rest for 15-20 minutes so the semolina softens.
- Fold in rinsed and dried raisins if using.
- Grease a baking dish with butter, pour in the batter, and smooth the top.
- Spread the remaining sour cream over the top for a golden crust.
- Bake at 180°C (350°F) for 35-40 minutes, until the top is golden and the center is set.
- Let the casserole cool in the pan for 10-15 minutes before slicing so it holds its shape.
