Loaded Baked Potato

A loaded baked potato takes something as simple as a plain baked potato and turns it into a much heartier, more festive dish with just a handful of toppings. The toppings are easy to adjust: sautéed mushrooms make a good stand-in for bacon, and Greek yogurt works just as well as sour cream for a lighter version.   4. While the potatoes bake, fry the bacon until crisp and slice the green onions.
  5. Slice each baked potato open lengthwise, gently mash the flesh with a fork, and add a pat of butter to each.
  6. Top with shredded cheese and return to the oven for 5 minutes, until the cheese melts.
  7. Finish with sour cream, bacon, and green onion, season with pepper, and serve hot.
