Warm Chicken Vegetable Salad

Warm chicken vegetable salad is an easy answer to evenings when you want something filling but not heavy. Piling just-cooked chicken and vegetables on top of fresh greens creates a nice contrast of temperature and texture — crisp cold leaves underneath, warm, tender bites on top.

The dish strikes a good balance of protein, fiber, and healthy fat on one plate: the chicken brings enough protein to make this feel like a real dinner rather than a light side, the vegetables add fiber and vitamins, and the olive oil contributes unsaturated fat along with most of the dressing’s flavor.

  1. Cut the chicken breast into bite-sized pieces, season with salt and pepper, and sear in 1 tbsp oil over medium heat until cooked through, 8-10 minutes.
  2. Cut the broccoli into small florets, and chop the bell pepper and zucchini into bite-sized pieces.
  3. Transfer the chicken to a plate, add the vegetables to the same skillet, and cook for 5-7 minutes, stirring, until tender-crisp.
  4. Stir in the crushed garlic and oregano at the end and cook for another 30 seconds, until fragrant.
  5. Arrange the spinach or salad greens on plates, then top with the warm vegetables and chicken.
  6. Drizzle with the remaining olive oil and lemon juice, adjust salt to taste, and serve right away.
