Rice Porridge with Apple and Cinnamon
2026-06-10

Rice porridge with apple and cinnamon is the kind of breakfast that feels like a lazy weekend morning even when it comes together on a weekday in about thirty minutes. Rice simmered slowly in milk turns soft and gently sweet, and it pairs naturally with caramelized apple and the warmth of cinnamon — comforting without tipping into overly sweet.
Short-grain rice works best here since it breaks down more than long-grain varieties, giving the porridge the creamy, almost pudding-like texture people expect from a milk-based dish. A slightly tart apple, like Granny Smith, is a good match — its acidity balances the sweetness of the milk and sugar, and a quick turn in butter softens it into something close to a light caramel.
The recipe is easy to adjust to whatever’s on hand: swap the sugar for honey or maple syrup, stir in a handful of raisins or chopped nuts for texture, or use a plant-based milk like oat or almond instead of dairy. For a heartier version, a spoonful of peanut butter or a sprinkle of flaxseed on top adds staying power through the morning.
The porridge itself needs very little hands-on attention — just an occasional stir while it simmers, timed alongside the apple cooking in a separate pan. It’s the kind of breakfast that warms you up on a cool morning and keeps you going well into the day.
Ingredients
- 3/4 cup (150 g) short-grain rice
- 2 cups (500 ml) milk
- 2/3 cup (150 ml) water
- 1 large apple
- 1 tsp ground cinnamon
- 2 tbsp sugar (or honey)
- 1.5 tbsp (20 g) butter
- pinch of salt
Instructions
- Rinse the rice under cold water until it runs clear.
- Bring the water to a boil in a saucepan, add the rice, and simmer over low heat for 5 minutes.
- Pour in the milk, add a pinch of salt, and cook over low heat for 15-18 minutes, stirring occasionally, until thickened.
- While the porridge cooks, peel and core the apple, then cut it into small cubes.
- Melt half the butter in a skillet and cook the apple with the sugar and cinnamon for 5-7 minutes, until soft and lightly caramelized.
- Stir the remaining butter into the finished porridge.
- Divide the porridge among bowls, top with the caramelized apple, and serve warm.
