Ingredients
- 3 medium beets (about 1.3 lb / 600 g)
- 2/3 cup (80 g) walnuts
- 2 cloves garlic
- 1/3 cup (100 g) sour cream or plain yogurt
- 1 tbsp lemon juice or apple cider vinegar

Instructions
- Boil the beets whole, unpeeled, until tender — 40-50 minutes depending on size.
- Let the beets cool, then peel and grate on the large holes of a box grater.
- Toast the walnuts in a dry skillet for 3-4 minutes to deepen their flavor, then roughly chop.
- Press or finely grate the garlic.
- Combine the beets, walnuts, garlic, sour cream, lemon juice, salt, and pepper.
- Let the salad sit in the fridge for 10-15 minutes before serving.
- Scatter fresh herbs on top just before serving.
