These berry muffins are the answer for mornings when you want something warm and homemade but don’t have time for anything fussy. The batter comes together by hand, no mixer or long creaming required, and the whole process from start to finish takes well under an hour.
Why you shouldn’t overmix the batter
Like most baking powder-based batters, this one gets tougher and more rubbery the longer you mix it once the dry and wet ingredients meet — overmixing develops the flour’s gluten more than you want for a tender crumb. Stir just until the streaks of flour disappear; a slightly lumpy batter is exactly what you’re after.
Fresh or frozen berries
Frozen berries work great here and don’t need thawing — in fact, adding them straight from the freezer keeps them from bleeding color into the whole batter. If you’re using fresh berries, tossing them lightly in a spoonful of flour before folding them in helps keep them suspended in the batter instead of sinking to the bottom during baking.
What the lemon zest is for
Lemon zest is optional but worth adding — it brings a bright citrus note that plays well against the berries’ sweetness and keeps the muffins from tasting flat or one-note. No lemon on hand? Orange zest works too, or just skip it; the berries carry plenty of flavor on their own.
Yogurt instead of milk
Yogurt or buttermilk gives this batter a moister, more tender crumb than regular milk would, and its slight acidity helps the baking powder do its job more effectively. Plain milk will still get you a good muffin, just a touch less rich.
Loaf or individual muffins
This batter works equally well baked as a single loaf or divided into a muffin tin — for individual muffins, cut the baking time to about 20-22 minutes and check for golden tops and a clean toothpick.
Storage
Baked and cooled, this keeps well in a sealed container at room temperature for two to three days, or up to five days in the fridge. It also freezes nicely — slice it into portions, freeze individually, and reheat one at a time for a quick, homemade breakfast whenever mornings get hectic.
Ingredients
- 1 2/3 cups (200 g) all-purpose or whole wheat flour
- 1 tsp baking powder
- pinch of salt
- 2 eggs
- 1/3 cup (100 g) plain yogurt or buttermilk
- 1/4 cup (60 ml) vegetable oil
- 1/3 cup (80 g) sugar
- 1 cup (150 g) fresh or frozen berries (blueberries, raspberries)
- zest of half a lemon (optional)
Instructions
- Preheat the oven to 350°F (180°C) and grease a loaf pan or line it with parchment paper.
- In one bowl, whisk together the flour, baking powder, and salt.
- In another bowl, whisk the eggs with the sugar, then stir in the yogurt, oil, and lemon zest.
- Combine the dry and wet ingredients, mixing just until no dry streaks remain — don’t overmix.
- Gently fold in the berries; if using frozen, add them straight from the freezer without thawing.
- Pour the batter into the pan and smooth the top.
- Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack and let cool a bit more before slicing.
