Oven-Baked Chicken Shashlik

Oven-baked chicken shashlik is the answer when you want that grilled skewer flavor without a charcoal grill or the time to fire one up. Chicken cooks faster and more forgivingly than pork or beef to begin with, which makes this a solid weeknight option, not just something for a special occasion.

Why the marinade needs time

Chicken, especially breast meat, is fairly lean on its own and can dry out easily in the oven. A marinade built on onion, oil, and lemon juice tackles that from two directions: the acidity from the lemon and onion helps tenderize the meat, while the oil helps lock in moisture during baking. The longer the chicken sits in the marinade, the more flavor it picks up — an hour is the bare minimum, but an overnight soak in the fridge makes a real difference.

Thighs versus breast

Chicken thighs have more fat than breast meat, which keeps them juicier and more forgiving if they spend a few extra minutes in the oven. Breast works well here too, but it’s worth watching the clock more closely to avoid drying it out — once the juices run clear rather than pink when pierced, it’s done.

What the onion is doing

Onion pulls double duty in this recipe: part of it gets grated into the marinade, where it releases juice and flavor into the meat, and part gets cut into rings and threaded onto the skewers alongside the chicken, where it lightly caramelizes in the oven. Those roasted onion rings end up being a genuinely tasty part of the dish, not just a garnish.

Getting a good char in the oven

  2. Slice one onion into rings; grate or blend the other for the marinade.
  3. Combine the grated onion, oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper.
  4. Add the chicken and onion rings to the marinade and mix well by hand.
  5. Cover and refrigerate for at least 1 hour, ideally overnight.
  6. Preheat the oven to 400°F (200°C) and line a baking sheet with foil.
  7. Thread the chicken and onion rings onto skewers, alternating between them.
  8. Set the skewers on a rack over the baking sheet and bake for 20-25 minutes, turning once, until browned and cooked through.
