&lt;p&gt;Sticking is essentially a form of micro-welding: proteins on the surface of the food come into direct contact with the metal and bond to it before either surface is hot enough to prevent that. Oil between the food and the pan acts as a barrier that stops this direct contact from happening. If there&amp;rsquo;s too little oil, it&amp;rsquo;s unevenly spread, or the pan isn&amp;rsquo;t hot enough yet, those bonds have time to form and the food effectively fuses to the surface. That&amp;rsquo;s why most sticking happens in the first few seconds after food hits the pan, not later in the cook.&lt;/p&gt;</description></item></channel></rss>
