&lt;h2 id="what-tofu-is-made-from"&gt;What tofu is made from&lt;/h2&gt;
&lt;p&gt;Tofu starts as soy milk, made by soaking and grinding soybeans, which is then curdled using a coagulant — usually a calcium or magnesium salt, sometimes citric acid. The curds are pressed to remove the whey, and the resulting block&amp;rsquo;s density depends on how much liquid is pressed out.
